Alice Arndell's Wedding Cake

     

Boiled Fruit Cake

(Adapted from The Edmonds Cookbook)

INGREDIENTS

400gm mixed fruit
100gm dried cranberries
Water
250g butter
1 1/2 c sugar
3 eggs, beaten
3 cups plain flour



4 tsp baking powder
1/2 tsp almond essence
1 tsp vanilla extract
2 tsp ground cinnamon
1 tsp ground nutmeg
Brandy (optional)


METHOD
1. Put fruits in saucepan and just cover with water. Bring to boil. Remove from heat and stir in butter and sugar until butter has melted.
2. Cool. Beat in eggs. Sift flour, baking powder and spices and stir into mix. Stir in essences.
3. Line a 23cm square or round tin with 4 layers of baking paper.
4. Spoon mix into tin and bake at 160°C for 1 to 1 1/2 hours.
5. Sprinkle brandy over hot cake and cool in tin.




Lime Sour Cream Cake

(Adapted from The Edmonds Cookbook)

INGREDIENTS

125gm butter, softened
1 generous tbsp finely grated lime zest
1 cup sugar
3 eggs


1 Cup plain flour
1 tsp baking powder
1/2 Cup sour cream


METHOD
1. Beat butter, zest, sugar and eggs until light and fluffy. Sift flour and baking powder together and fold into egg mix alternately with sour cream.
2. Pour mix into a greased and lined 20cm round tin and bake at 160°C for 45 min.




Chocolate Cake with Ganache

(Adapted from The Edmonds Cookbook)

INGREDIENTS

Chocolate Cake

175gm butter
1 tsp vanilla extract
1 3/4 Cup sugar
3 eggs
1/2 Cup cocoa
2 c plain flour
1 1/2 tsp baking powder
3/4 Cup milk
100gm dark chocolate


Ganache

250ml Cream
250g dark chocolate melts

METHOD
1. Cream butter, vanilla and sugar. Add eggs one at a time.
2. Sift cocoa, flour and baking powder.
3. Heat milk and chocolate together until chocolate has melted. Fold in flour then stir in milk mix a little at a time. Grease and line tin or tins and bake at 190°C for 20-25 min.
4. Once cool, split cake in two and fill with ganache.
5. To make ganache, bring 250ml cream to a simmer and add 250gm dark chocolate melts. Stir until combined and then cool in fridge until cold. Beat with a wooden spoon until slightly thickened.




Vanilla Swiss Meringue Buttercream

INGREDIENTS

16 large egg whites (30g each - total 450g, or 2 cups)
800gm cups granulated sugar
2 1/2 lbs of unsalted butter, softened but cool, cut into cubes
60 ml (2 tbsp) pure vanilla extract
1/4 tsp salt

METHOD
1. Wipe the bowl of an electric mixer, whisk attachment, small bowl, and whisk with paper towel and lemon juice (or vinegar), to remove any trace of grease.
2. Add egg whites and sugar, and simmer over a pot of water (not boiling), whisking constantly but gently, until temperature reaches 60°C, or if you don't have a thermometer, until the sugar has completely dissolved and the egg whites are hot (you can feel a drop in between your fingers to ensure no granules).
3. Take off of stove, and place bowl back on electric mixer fitted with whisk attachment, begin to whip until the mixture is thick, glossy, and neutral (you can feel outside of the bowl to test temperature). Switch over to paddle attachment and, while mixing on low speed continuously, add butter one cube at a time until incorporated, and mix until it has reached a silky smooth texture (if curdles, keep mixing and it will come back to smooth).
4. Add vanilla and salt, mix well. You can also add a wide variety of flavourings, extracts, and more. If buttercream is too runny, the butter was possibly too soft - place into the refrigerator for about 15 minutes, then beat again. If still too runny, add a few more cubes of butter and keep beating. Use immediately, or refrigerate/freeze.
