Abe’s fruit bagels, sliced in half (slightly stale is good)
bananas, thickly sliced
syrup, to serve
1 Place eggs, milk, vanilla and sugar together in a
shallow bowl. Whisk to combine.
2 Dip each slice of bagel into egg mixture, allowing
bagels to soak up some of the mixture.
Melt a little butter (or use vegetable oil, if preferred) in a large frying pan
set on medium-high heat. Add as many slices of eggy bagel into the pan as will
fit at one time. Fry for 1-2 minutes until golden brown, turning to cook on
both sides. Repeat with remaining bagel slices.
Fry sliced banana in butter in the same pan, until golden brown. Serve Bagel
French Toast layered with caramelised banana. Combine cinnamon and sugar and
sprinkle over French Toast. Serve drizzled with maple syrup, if desired.
