Bean & Tomato Salad with Pickled Red Onions & Apple Cider Vinaigrette

Ingredients

2 lbs string beans, cut on a bias
1 lb cherry tomatoes, quartered
1 red onion, cut in half and sliced thin
1/2 cup red wine vinegar
1/2 cup sugar
2 Tbl ground black pepper
2 cups cider vinegar
1 cup extra virgin olive oil
Salt, to taste
Chopped parsley, for garnish

Directions

1. Blanch, shock, and drain string beans.

2. Bring sugar and red wine vinegar to a boil. Pour mixture over red onions.

3. Whisk together black pepper, cider vinegar, salt, and olive oil. Check seasoning.

4. Toss beans, tomatoes, and pickled onions with vinaigrette and recheck seasoning.

5. Finish with chopped parsley.

(10-12 Serves)
