Chicken and Gnocchi Pasta Bake Recipe

If you are wondering what in the world gnocchi is, well you wouldn't be alone: it is basically potato pasta, little dumplings made out of potato. Sounds strange but it tastes amazing!

Potato, pasta flour and eggs are combines and shaped into little dumplings and then they're boiled and served with your choice of sauce or side. You can find gnocchi in the chiller cabinet of your supermarket along with all the other fresh pastas.

This bake has got to be one of the easiest recipes ever., exactly what you need after a long day playing "Mum's Taxi".

200g cooked sliced chicken
500g potato gnocchi
400g can of chopped tomatoes
2 tblsp water
1/2 cup low fat cottage cheese
1/4 cup grated Parmesan cheese
Fresh basil, to serve

1. Preheat the oven to 200 degrees C and get yourself a large mixing bowl.
2. Combine the chicken, gnocchi, tomatoes, water and cottage cheese and mix everything together well. Spoon the mixture into a large ovenproof casserole dish and sprinkle the Parmesan cheese on top.
3. Bake in the oven for 15-20 minutes until the cheese on top is golden and the bake is heated right through.
4. Remove from the oven, tear fresh basil over the top and serve with a green salad.

Dinner in 30 minutes? Done!
