1L vegetable stock
1 red chilli, sliced thinly
2 Tbsp chives, chopped
2 star anise
100g bacon bits, chopped
100g squid, chopped
500g noodles of your choice
1 bunch coriander, chopped roughly plus extra for garnishing
1 Tbsp olive oil
1 head bok choy, sliced lengthways
¼ cup chilli, sliced to garnish
In a large pot place the stock, chilli, chives, star anise, bacon bits, squid, noodles and coriander. Simmer for 15 minutes.
Heat 1 tablespoon oil in a frying pan. Add the bok choy and cook until wilted.
Remove the star anise from the soup and add the bok choy.
Serve soup in bowls and garnish with extra sliced chilli and coriander
