Corn fritters with tomato salsa



1 Cup flour
1 tsp baking powder
Salt and pepper
2 Cups cream-style sweetcorn
2 eggs
½ Cup milk
Punnet of cherry tomatoes
Half a red chilli
2 cloves garlic
Juice of 1 lime
Handful of coriander
Sour cream to serve


  1. To make the salsa, begin by chopping the tomatoes into quarters. Place in a bowl with finely diced chilled and crushed garlic.

  2. Chop the coriander and add to the mixture. Add some olive oil, juice of a lime and season well.

  3. Crush with a fork until the tomato pieces are squashed slightly and the flavours mixed together well.

  4. To make the fritters, mix the flour with the baking powder and some salt and pepper. Add the sweetcorn and mix well.

  5. Separate the eggs. Lightly beat the egg yolks, add to the milk then incorporate into the corn mixture. Beat egg whites until stiff and fold into mixture.

  6. Heat oil in a large frying pan and drop in spoonfuls of the mixture, frying until golden brown. Serve with the tomato salsa and a dollop of sour cream.
