Emily's Savoury Mini Muffins

     

INGREDIENTS
2 cups grated tasty cheese
1 1/2 cups self-rising flour
1/2 tsp salt
1 tbsp sugar
Pinch of cayenne pepper
1 large egg
1 cup milk
Brie cheese
Parsley
Sundried tomato


METHOD
1. Heat oven to 210°C.
2. Measure the cheese, flour, salt, sugar and cayenne pepper into a large bowl. Mix lightly until combined.
3. In another bowl beat the egg and milk until evenly combined. Sprinkle the flour and cheese mixture over the liquids then fold together.
4. Spoon into standard or mini muffin tins.
5. Sprinkle with extra cheese, cayenne pepper or paprika.
6. Cook for about 12 minutes.
7. When cool serve with brie cheese and parsley or sundried tomato.
