Emily's Sweet Pastry

     

(Dean's Recipe)

INGREDIENTS
White chocolate
Pastry cream
Blueberries
Apricot Jam


METHOD
1. Use Dean’s recipe for the pastry.
2. Put pastry into a mini muffin pan. Prick pastry with a fork before cooking.
3. Cook until golden, then cool.
4. Melt some white chocolate and line base and insides of pastry case with a thin layer.
5. Fill with pastry cream (recipe with Choux pastry) and put blueberries on top.
6. Glaze with heated and strained apricot jam.
