Esme's Cheese & Chive Buttermilk Scones

     

INGREDIENTS
3 cups flour
6t baking powder
25g butter
375g grated tasty cheese
Chives
1 carton buttermilk


METHOD
1. Sift dry ingredients. Rub in butter. Reserve 2 handfuls of cheese and stir the rest into the flour with the chives.
2. Add in ½ the buttermilk and stir with knife to bring together. You will probably need to add more buttermilk until a soft dough is achieved.
3. Pat out on floured board and cut into 9 scones. Don’t pat your dough out too thin, a high dough will result in a high scone.
4. Sprinkle with reserved cheese and bake for 12-15 minutes at 220°C.
