Esme's Pink Lamingtons

     

INGREDIENTS

Sponge

2 cup flour
2 tsp baking powder
Pinch salt
125g butter
¾ cup Chelsea Caster Sugar
1 tsp vanilla
2 eggs
½ cup milk



Icing

2 cups Chelsea Pink Berry Flavoured Icing Sugar
3 Tbsp boiling water (approx)
1 knob butter (approx.10g)

Topping

3 cups desiccated coconut



METHOD

1. Preheat oven to 180°C
2. Sift flour, baking powder and salt together. In a separate bowl cream butter, sugar and vanilla together until pale and fluffy.
3. Beat in eggs. Fold in flour and milk until combined.
4. Bake in loaf tin for 20-25mins. When cool, cut into squares.
5. Icing: Mix ingredients together, adding enough water to form a thin icing.
6. Dip sponge pieces into icing and roll in coconut.
Makes: 6 pieces
