Gemma's Chocolate Self Saucing Pudding

1 cup flour
2 tsp baking powder
½ tsp salt
½ cup sugar
¼ cup cocoa
75g melted butter
1 cup milk
1 tsp vanilla essence
2 cups brown sugar
¼ cup cocoa
2 cups boiling water


Preheat oven to 180C.

To make the pudding, sift flour, baking powder, salt and sugar and cocoa into a mixing bowl. Add butter, milk and vanilla and mix well. Pour into a round, 20cm wide, deep ovenproof dish greased with butter.

Combine brown sugar and cocoa and sprinkle over pudding.

Pour over boiling water and bake for 40 minutes. Don't worry if it looks like a mess, it will be fine
