Greece: Crete - Tzatziki
Ingredients:
1 cup grated cucumber (no need to peel it)
½cup unsweetened plain yoghurt
½ teaspoon salt
2 cloves (or to taste) garlic, grated
1 tablespoon chopped fresh mint or dill
1 tablespoon extra virgin olive oil
Squeeze excess liquid from grated cucumber
(between your palms or using a tea-towel). In a bowl mix the drained cucumber
with the remaining ingredients. Taste and adjust seasonings as required.
