Hayley's Chorizo, Feta & Spinach Pie

     



INGREDIENTS


Short Pastry

2 cups Edmonds standard plain flour
125gm butter
Cold water
1/4 tsp salt




Filling

1 Large Chorizo Sausage
1 cup goats feta cheese
1 cup frozen spinach (moisture squeezed out if frozen)
2 Garlic cloves finely chopped or crushed
3-4 eggs
Milk
1/2 cup tasty cheese
Salt and pepper to taste
Parsley




METHOD

1. Sift flour and salt together.
2. Cut in the butter until it resembles fine breadcrumbs.
3. Mix to a stiff dough with a little water.
4. Roll out very lightly and do not handle more than is necessary.
5. Blind bake at 200 for 12 minutes. Remove baking beans or rice and return to the oven for 1 minute to dry pastry out.
6. For the filling, chop chorizo into small cubes or slices as desired. Reserve 4 - 5 slices to top the pie.
7. Whisk eggs with a little milk in a bowl.
8. Add salt, pepper and garlic.
9. Roughly chop the Feta cheese.
10. Prick the base of the baked pastry with a fork and lightly egg wash the base before adding fillings
11. Sprinkle directly into blind baked pastry along with chopped Chorizo and shred spinach along top.
12. Pour egg mixture on top.
13. Sprinkle with tasty cheese, place reserved chorizo slices on top and add parsley if desired.
14. Bake at 200°C for 30 - 40 mins or until egg and pastry are cooked.
