Hayley's Gran’s Citrus Tart

     



INGREDIENTS


Base

1/2 cup icing sugar
1 cup flour
125g butter
1/2 tsp vanilla essence

Filling

1/2 cup caster sugar
Juice and zest of 2 - 3 lemons (approx 2/3 cup)
2 tbspn flour
4 eggs
100g melted butter




Topping

100g compound milk chocolate melted
50ml cream
tsp lemon juice




METHOD

1. Base first: Mix all ingredients in a food processor until resembles fine breadcrumbs. Press into a loose bottomed tin and refrigerate for 10 minutes. Blind bake for 15 minutes at 160°C, then remove blind baking products and bake for a further minute to dry pastry out.
2. Filling: Put all ingredients into a food processor and mix thoroughly - pour filling into partly cooked base and bake in an oven for 25 - 30 minutes.
3. Topping: Once tart is completely cooled, melt chocolate add cream and mix with egg beater until smooth - add lemon juice and mix. Pour a small amount on top of tart. Refrigerate for 1 hour before serving with berries, cream or yoghurt.
