cup caster sugar
cup plus 1 tbsp self-raising flour
cup low fat milk
tsp vanilla extract
small squares dark chocolate
Preheat oven to 180°C. Line 12-hole muffin pan with paper cases.
Place all ingredients, except chocolate, in a bowl and beat with an electric
mixer on low speed for 1 minute until mixture is pale and smooth.
Spoon mixture into paper cases and place a square of chocolate into each. Bake
for 15 to 20 minutes or until a skewer inserted in the centre of one cupcake
comes out clean.
