Hidden Treasure Cupcakes


Makes 12
100g butter, softened
2/3 cup caster sugar
1 cup plus 1 tbsp self-raising flour
2 small eggs
1/3 cup low fat milk
1 tsp vanilla extract
12 small squares dark chocolate

1 Preheat oven to 180°C. Line 12-hole muffin pan with paper cases.
2 Place all ingredients, except chocolate, in a bowl and beat with an electric mixer on low speed for 1 minute until mixture is pale and smooth.
3 Spoon mixture into paper cases and place a square of chocolate into each. Bake for 15 to 20 minutes or until a skewer inserted in the centre of one cupcake comes out clean.
4 Remove to a wire rack to cool. Once completely cold, ice and decorate, as desired.
