Homemade Lamb Burgers with Caramelised Red Onions, Tzatziki and Grilled Haloumi - Lucy and Johnny

Burger Patties
500 g lamb mince
1 egg
½ cup breadcrumbs
2 Tbsp ground cumin
2 Tbsp ground coriander
2 garlic cloves, crushed
½ red chilli, chopped finely
salt and pepper

Caramelised Onions
1 Tbsp olive oil
2 large red onions, sliced thinly
2 Tbsp balsamic vinegar
2 Tbsp white sugar

1 cup greek yoghurt
2 garlic cloves, crushed
Juice of 1 lemon
¼ cup chopped mint
salt and pepper

To Serve
200g haloumi, sliced
2 tomatoes, sliced
ciabatta, toasted

  1. In a large bowl combine the mince, egg, breadcrumbs, cumin, coriander, garlic, chilli, salt and pepper. Shape into four even size patties.  Refrigerate for at least 20 minutes before cooking.

  2. To caramelise the onions – heat the oil in a medium sized pot, add the onions and cook for a few minutes to soften. Add the balsamic vinegar and sugar. Turn the heat down and cook slowly for about 20 minutes until the onions are soft and caramelised.

  3. To make the tzatziki – in a small bowl, combine the yoghurt, garlic, lemon, mint, salt and pepper.

  4. In a lightly greased frying pan cook the patties for 8 minutes on each side, leaving slightly pink in the middle. Remove from the pan.

  5. In the same pan fry the haloumi until golden on each side.

  6. Place the pattie onto toasted ciabatta and top with haloumi, tomato and onions and tzatziki.
