16 very fresh, green shell mussels, shucked
½ teaspoon sea salt flakes
2 tablespoons fresh lime juice
1 tablespoon fresh baby coriander leaves
1 teaspoon chopped hot red chilli
2 tablespoons olive oil
Use really good, fresh mussels for this.
The dark red mussels are female and have a sweeter flavour.
