Ingredients:
250gm Ground almonds
285gm Icing sugar
20gm Rice sugar
¼ tsp Cream of tartar
⅛ tsp Baking powder
65gm Egg white (approx 2)
30gm Liquid glucose
1tsp Almond extract

·Mix almonds, icing sugar, rice flour, cream of tartar and baking powder for two minutes in bowl of cake mixer
·Whisk egg whites and glucose together until foamy. Do not take to soft peak stage.
·Pour egg white mixture into dry ingredients
·Add almond extract
·Mix until dough forms
·Dust bench top with a little ground almonds
·Roll dough into logs and cut on an angle into 20gm biscuits
·Rest biscuits on tray for one hour before baking
·Bake at 160⁰C for 15 minutes until a very pale golden brown
