Sarah's Chocolate Whoopie Pies with Blueberry Jam and Cream Cheese Frosting

     

Cream Cheese Buttercream Icing:

500g Cream Cheese
250g Butter (soft)
2kg Icing Sugar

Method:

Beat cream cheese and butter together until well combined.Add icing sugar and beat well.If the icing is too thick and stiff add some full cream milk or cream 1 tablespoon at a time to adjust the consistency.Make sure you beat well between each addition of cream or milk because it won’t take much for the icing to thin-out.Add colour to this icing as desired.

Whoopie Pie Ingredients:

1 ½ C sugar
115g butter
2 eggs
¼ C oil
1 T vanilla
3 C flour
1 C cocoa powder
½ t b/powder
¾ t b/soda
½ salt
1 ½ c milk

Method:

Preheat oven to 180 degrees Celsius.Beat sugar, butter and eggs until well combined.Add oil and vanilla and beat again.Sift all dry ingredients in to a separate bowl.Add half the dry mix into the egg mixture and mix until combined.Add half the milk and mix until combined.Add remaining dry mix and mix until combined.Add remaining milk and mix until combined.Pipe mixture onto lined baking sheets.Bake for 10-12 minutes till cookies are cooked.Remove from oven and cool on a cooling rack.Pipe some cream cheese buttercream icing around the outside of the whoopie pie and spoon a bit of blueberry jam into the centre of the icing.Sandwhich with another whoopie pie.

Blueberry Jam

Place 500g of blueberries in a pot with 500g jam setting sugar over a medium heat.Mix until sugar is dissolved.Add a knob of butter and bring jam to a rolling boil.Boil for approximately 5 minutes and check whether jam is done with the ‘wrinkle test’.Once jam is ready, pour into sterilised jars.

Peach Jam


Place 500g of chopped peaches in a pot with 500g jam setting sugar over a medium heat.Mix until sugar is dissolved.Add a knob of butter and bring jam to a rolling boil.Boil for approximately 5 minutes and check whether jam is done with the ‘wrinkle test’.Once jam is ready, pour into sterilised jars.
