Sticky Honey Date Tea-Loaves

Serves 12

2 cups chopped dried dates
1 tsp baking soda
1 1/4 cups boiling hot Twinings Camomile and Spiced Apple Tea infusion
2/3 cup Airborne Kamahi Honey
1 x 120g pouch Freshfields Apple sauce
1 tsp Equagold pure vanilla extract
3 eggs
1/2 cup chopped crystallised ginger
2 cups self-raising flour, sifted

1 Place dates and baking soda in a bowl. Pour over hot tea, cover and set aside to cool.

2 Preheat oven to 160°C. Grease 12 individual loaf tins (or one large loaf tin).

3 Place honey, apple sauce, vanilla and eggs in a bowl and whisk by hand, to combine. Stir in ginger and cooled date mixture. Lastly, stir in flour.

4 Spoon mixture into prepared tins. Bake for 25 minutes (or 1 1/4 hours for large-sized loaf) or until a skewer inserted comes out clean but moist. Slice and serve drizzled with extra honey, if desired.
