The Water Drop Vegetarian Café,
Laksa Recipe

Main Ingredients:
2 tablespoons of Oil
2 cups of Vegetable Stock
2 cups of Water
1 tablespoon of pounded Lemon Grass
1 tablespoon of Chili Paste
1 tablespoon of Coriander Powder
1 inch of Ginger (grind)
1 inch of Galangal (pounded)
1 cup of Coconut Milk

Other Ingredients:
Yellow noodles blanched
Vegetarian fish ball
Vegetarian barbeque pork
Mint leafs
1/4 Lemon

Method:

In a stock pot add oil, sauté the ginger until fragrant with star anise
Add in water
Add in coriander powder
Add in chili paste and stir until aromatic on low heat
Add in lemon grass, galangal with vegetarian stock and tofu and simmer
Lastly, add in coconut milk and salt

Note:
To assemble a bowl of Laksa for serving, transfer the noodles to a serving bowl. Add a handful of bean sprouts, top with vegetarian barbeque pork & fish balls and garnish with mint leafs and 1/4 lemon.
