amalfi/italy - Grilled Nectarines with Vanilla Ricotta
This dessert is so simple it barely requires a recipe!
Serves 6
Prep time: 20 minutes
Cooking time: 15 minutes
6 x firm, ripe nectarines
3 tablespoon castor sugar
1 ½ cups ricotta (Kapiti is good)
2 tablespoons sour cream
1 teaspoon quality pure vanilla extra (Equagold is good)
4 tablespoons caster sugar
Half and de-stone each nectarine. On a saucer sprinkle the first measurement of caster sugar and dip each nectarine half, flesh side down, into the sugar. Place these sugar side down in the bbq or on a grill plate. Cook them slowly until the sugar begins to burn.
For the topping, whisk together the ricotta, sour cream, vanilla extract and second measure of sugar until smooth and creamy.
To serve, top each nectarine with a generous dollop of vanilla ricotta.
